Surprise and delight at dinner time. The coconut shrimp game has never been better!
What You'll Need:
1/3 cup All purpose Flour
1/2 tsp. Salt
1/2 tsp. Pepper
2 Large Eggs
1/4 cup Candied Jalapeno Sauce (and extra for dipping)
3/4 cup Panko bread crumbs
1 cup Sweetened shredded coconut
1 lb. Raw large shrimp, peeled and deveined with tails attached
1/2 cup vegetable oil for cooking
What To Do:
With 3 medium bowls. Combine flour, salt, and pepper in one. Beat eggs and candied jalapeno sauce together in the second bowl. Combine Panko and coconut in the third bowl
Grab that tail and dip the shrimp into the flour, shake off the excess, then the eggs, and then dredge the shrimp into the coconut mixture, pressing gently to adhere. Place the coated shrimp aside on a plate and coat the remaining shrimp.
Add enough oil to cover the bottom of a large skillet over medium heat. Without crowding the pan, add a layer of shrimp. Cook 2-3 minutes and turn, frying the other side for 2-3 minutes or until golden brown.
Place the cooked shrimp on a plate lined with a paper towel as you fry the remaining shrimp.
Serve with extra candied jalapeno sauce for dipping
