What You'll Need:
-
1 TBS Butter
-
1 TBS Olive Oil
-
1 1/2 Cups Diced Onion
-
2 1/2 tsp. Salt
-
1 tsp. Black Pepper
-
2 1/2 pounds Meatloaf Mix or Ground Beef
-
1 Cup Panko Bread Crumbs
-
1 Cup Mambo Thick & Spicy (divided)
-
2 Eggs, beaten
-
1 1/2 tsp. Garlic Powder
-
1 1/2 tsp. Dried Parsley
What To Do:
Step 1:
Preheat oven to 400 degrees
Step 2:
Add butter and oil to skillet. Once butter is melted, add onions, and cook about 7 minutes or until soft. Remove from heat and let cool slightly.
Step 3:
Add the meatloaf mix to a large bowl along with the salt, pepper, 1/2 c. Mambo Sauce Thick and Spicy, breadcrumbs, eggs, garlic powder, parsley and the cooled, cooked onions. Mix together until all the ingredients are incorporated, be careful not to over mix, making a tough meatloaf.
Step 4:
Form an approximately 10” long, 5” wide meatloaf on a baking sheet lined with foil that has been coated with cooking spray or parchment paper for easy clean up.
Step 5:
Pour ¼ cup Mambo Thick and Spicy over the top of your meatloaf and bake for 35 minutes. Remove and pour your last ¼ cup of Mambo Thick and Spicy on top. Return to oven for another 20-25 minutes or internal temperature reaches 160 degrees.
